Super-dry, fresh Ginger Ale

Ingredients:

2 cups of chopped fresh ginger root
Chopped zest of one half a lemon
1 cup of honey
Sparkling water

Into 4 cups of boiling water, add the chopped ginger root and the zest and let the mixture come to a boil for ten minutes or so. Add the honey and continue to boil for another 15 minutes - you want to be left with 3 cups of liquid. Once your liquid is reduced and cooled, strain it into a container and refrigerate it, in a closed container, until cold. To serve: use 1/4 cup of ginger syrup to one cup of sparkling water. For sweeter flavor, add more honey.

Green Tea Mojito

Ingredients:

4-5 fresh mint stems per glass
Juice of 1/2 lime per glass
1/2 oz agave nectar
4 oz. unsweetened, brewed green tea
4 oz. sparkling water

Each drink is made in the same glass it's served in. Start with the mint, and carefully smash four or five mint sprigs with the agave nectar (the pieces of mint are supposed to float in the drink). Add 4 or 5 ice cubes. Squeeze 1/2 lime over the ice. Add four ounces of sparkling water and then the green tea. Garnish with a mint sprig. If you prefer a sweeter drink, increase the agave nectar.

Cucumber/Orange Infusion

Ingredients:

Eight thin slices of fresh cucumber
Eight thin slices of non-navel orange at room temperature.
32 oz. water and ice cubes

Outrageously easy and outrageously refreshing; infusions are practically sugar-free and super-healthy. Combine cucumber and orange slices in a pitcher with fresh water and ice cubes. Cover and refrigerate for 2 hours. Garnish with an orange wedge or cucumber stick. For variety, follow the same instructions and use several sprigs of fresh tarragon, slices of lemon, lime, peach or even cinnamon sticks!

Apricot Fizz

Ingredients:

1 quart of limeade
3 cups of unsweetened apricot nectar
Sparkling water

Combine limeade with apricot nectar and chill. When serving, add ice cubes, fill glass halfway with sparkling water, then add juice mixture. Garnish with maraschino cherry.
